Weather looking to be nice and warm 50-60° this weekend, although a bit breezy! Still, great for smoking :D

For me, it's going to be Tri-tip until it reaches 120° then reverse sear it, pulling at 135° (family pref temp).

What are you going to do?

Threw an 8 3/4 pound brisket on last night. It was a busy afternoon and evening with one son having a birthday and another getting into a car accident. (Everyone was fine, but the car could be totaled... OUCH!) So, the brisket didn't get any more attention that a quick dry rub before going on the BGE indirect at 225. I didn't even use any smoke wood.

This morning after 10 hours on the pit, it's already reading between 171 and 183. No worries. at this rate, it'll hit the 202 degree sweet spot somewhere after Noon. I'll pull it, FTC it, and slice it for dinner around 5:30. Perfect. 20180512_080728.jpg 20180512_080754.jpg
