My better half comes home from shopping yesterday with two more butts to add to the one I bought the other day while at the butcher. I was holding it until I could think of something out of the ordinary to do with it but momma had better ideas. She wants some pork put away for when I'm away out of town for prolonged periods.
I promise, I'm not getting addicted I can stop whenever I want...

I also put on a mega pizza fatty to go with the three lil pigs.

Yeah, there was a lil better than two slices left after dinner last night. I had two myself. Wife says we can have the fatty for dinner w/leftovers but I leave town on projects sometimes up to three months at a time. We were down to two vac packs of pork so I reckon she was panic stricken...lol

I think I'm pulling the tied up one early to slice and the other two for pulled pork.. Maybe it's a good thing. I can take some with me when I go. I've been close to home for a spell now and thats unusual... I'm sure theres a problem child project (my specialty) brewin soon...

I bet your meat bill is highest its ever been. Good luck with them butts. Don't you ever work anymore?

Looks like the learnin curve is gettin smaller and smaller for ya. Thats a good thing. Way to go!

Learning curve well yeah....

Funny story here, I was getting these roasts ready while my wife & the kids were out back roastin marshmallows and I saw a 1/2 gallon of apple juice sitting on the counter. I think, cool she bought more apple juice and used it to make my injecting solution. Little more apple juice by taste I says to myself... Then a lil more... hmmm not getting very appley here but not as salty and went on to inject and then rub out the roasts. Wrapped em up and into the fridge they went. She was pulling the pie out of the oven about this time while I was cleaning up my mess and I thanked her for getting more apple juice.

"Uh,,,, Honey,,, That was tea" she says to me...

So,, what I've learned is not to asume that apple juice is apple juice.. Even if she did just get home from the grocery store and it was the color of apple juice in an apple juice container... Yesterday we had tea from a pitcher. Go figure.

All the same, the pork is smelling really good right now and soon to be foiled (no pun intended). Maybe I'm on to something here...
 
Tea injection. You might be on to something. Be interesting to see how they taste.
 
Well I have to say, I really couldn't tell the difference between these and any others I've had lately.

Seein as I'm using his recipe anyways...Great recipe there Capt. Dan... Keeping in mind that the tea was the Crystal Light kind probably not that much difference in taste cept the appley part...

Here they are just before pulling out the slicer upper..



And after resting it was sliced up. Still nice & moist. I slipped a little apple juice into the vac pak sealed and into the freezer for a later meal. I had a morsel that happened to fall off though asnd it was pretty tastey..



The puller uppers finally got finished after the 10lbr (the cantankerous one) stalled out for a little better than an hour and the second being done a full hour before rested now has company now in the cooler.

Seeing as I have a 4:00am wake up call to hit the road in the morning The better half agreed to pullem for me tonight bless her heart. No pics there I reckon, sorry.

I want to thank Capt. Dan for his recipe by the way and for disturbing the Days off Mojo I seemed to have going on there... Here's to you buddy...
