Ogallala Chucky!

    Finally, cooling off and the butchers are putting roasts back in the meat cases here!!! Found a nice Chuck on sale, $4.99/#. Two hours to dinner time, no problem for the cream can!

    Here's the players.





    I'm kind of mad at Cascade Lakes Brewery. Paddle board Porter was Monkey Face Porter since it was first brewed. Named after a feature at Smith Rocks called monkey Face, because it looks like a monkeys face. They changed the name so they can market the beer to all you non Oregonians!!!! BOOO!

    Okay chopped the veggies, shucked the corn and smashed some garlic everything into the can except the roast.

    I don't know what you're waiting for! Last year at the end of September I cooked two chucks in my can for a potluck while camping. There wasn't a leftover in sight afterwords! The corn always is a hit. The beer takes the corn to another level!

    Locks in all the juicy good flavor! When I have time, what I like to do is cold smoke the Chuck for a hour or two. Then sear and place into the can. Another good option is to inject then sear.

    Okay here's the final C-View! I feel a food coma coming on! Took three large bowl plates and one large measuring cup to serve





    One note, Chef JJ's smokey Au jus is great, fantastic, beyond awesome. But the nice thing about can cooking is you get a great Au jus too! If I had cold smoked the Chuck prior to putting it in the can, and added a bit of tomato paste, this would be the same Au Jus!

    And there we have it. Not pulling tender but slice tender. For pulling you'd need 4 hours, not 2.

    Thanks! Makes tasty meals! Now that fall is upon us I will be using it more again. Sure makes a great pot roast in a short amount of time. Kahlua pork is going to be one of my next adventures in the cream can.

    The Ogallala Company is great to work with, excellent customer service, very much like AmazN. The can is stainless so it cleans easily. There is no gasket to fail and the machining is first rate. The 2.5 gallon can is perfect for everyday cooks or when you need to feed 8-10 people. We have a 5 gallon cream can too, but rarely use it anymore. You could cook for 50 easily with it.
