I have a cheaper offset smoker. I am trying to keep my temperature constant. Is charcoal or wood better? Ways to control temp? Need help to make the food better
 
Dry wood can ignite then burn out ignite burn out unless you soak it you would get fluctuating temps charcoal burns long and slow.
