Inspired by DirtSailor2003, roadside chicken recipe >> http://www.smokingmeatforums.com/t/213869/roadside-chicken

Kudos to Case.

I made these for a potluck NYE party that we attend.  I changed the recipe a bit as I did not want them to be too vinegary.

Everyone liked them and no leftovers!

Next time I'll add more serrano chillie, some cayenne and a bit more lime.  Good flavor but we like wings with a bit more punch.

1/2 C Cider vinegar
1/2 C Apple juice (natural, no added sugar)
1/2 C Vegetable oil
1/4 C Worcestershire
1TB Sea/Kosher salt
1/2 tsp white sugar
1 tsp Garlic powder
1 tsp Onion powder
1 tsp White pepper
1/2 tsp Celery salt
1 tsp Lime juice
1 chopped Serrano chili

I made about 6-7 pounds of wings.  RadioGal did all the trimming, love a lady with a sharp knife!.  Trimmed into "drummies" and "flappers",

saved the tips for soup.  Put chicken in Ziploc bag and marinate, overnight. Loaded the AMNPS with 2/3 apple and 1/3 maple pellets.

Put them on to smoke 225F for about 3 hours, kicked the temp up to 240-250F for the last hour.  My little electric does not do well with higher temps.  Pulled them to cool and rest.  Then into a 350F oven for 20 minutes prior to going to the party.

Happy New Year!
