    Hi All
    Got an offset smoker (BBQ Chef) from the wife in August for B-day. Done a coupel of briskets but that's about all so far. AZ but Cool enuf now to get into some serious smokin and see what it is all about. Turkey next...wahoooooo!!

    Also thinkin on smokin some trout caught a couple of weeks ago. Guess the possibilities are endless. Looking forward to learnin from your mistakes and tryin to keep mine to a minimum. In Any case HOWDY
