New member to the forum but been looking for a long time. I am 28 years old from Houston and live it Albuquerque now. I am chef at a resort outside of town and love cooking. My one true love is smoking. Have my modified trailblazer at home and a NU-VU smoke13 at work. I love seeing what I can smoke and playing with new ideas. Enjoy curing meat also and have tried a few prosciutto's with luck. Been lurking around to start curing my own bacon. Love the forum and help everyone has for each other.
