Happy new year.  I've spent many hours reviewing websites and from what I can tell, this is the best out there!  I am in northern MN and if I move any further north I'll start going south again. I enjoy the three months of summer we have and only have time to enjoy my venison processing in the cold months.  I recently got a industrial -80F freezer with steel inner shell. I am going to convert it over to a electric smoker and am looking for advice.  I am going with a PID controller for the set it and forget it approach.  Tips, links, and advice are certainly welcome.  Thanks for all the good information
