'Nother Newbie

  1. Brand new to smoking. Just picked up a Masterbuilt Electric from Sam's club and am looking forward to getting started. Don't have a clue what I'm doing so will probably be some trial and error. If anyone can recommend what I should try first as a beginner that would be great.

    I'm from Wamego,KS and am a huge K-State guy, yes I know, we are going thru a little difficulty right now.

    Look forward to info and expertise of this forum.

    First season your smoker, I spray mine with an entire can of Pam, then run at 250* with smoke going for about 4 hours. Then drop in a "fattie" (this will be your first smoked meat project) See the fattie section for some great ideas.

    Then move to a bacon covered and brined spatchcocked chicken, super good and really easy!

    Buy a good thermometer like the ET732 Maverick. You can buy it for $59.99.  Also, you should take the 5-day ecourse. It's free and packed with lots of information. I had to learn by trial and error...Mostly error........[​IMG]

    Couple things to remember. Smoke low and slow and not too much smoke. All this can be learned on this site if you take the time to nose around........................Thin blue smoke is the best.....[​IMG]

  7. Hello and welcome to SMF!  I have an MES 40 and absolutely love it! Fatties are always a good start and pretty forgiving as is chicken. Good luck

    As far as the AMNPS, will I have trouble with smoke with the standard chip

    tray or is it just an upgrade?

    I do not own an MES but I would guess you would be fine with the standard setup for a while (it just requires more attention). The AMNPS is just such a versatile tool, you can load it up and get hours of perfect smoke before having to reload. You can also cold smoke things such as cheese, bacon, nuts and salt.

    Welcome.  I also will advise you too check out the MES threads.  There are several different models, each of them may have their own quirks / bugs.  Once you know about them,, the MES will do all you want it too.  The biggest issue that I have seen is "do not trust the stock thermometer in the door", it is usually off by 30+ degrees.  Invest in a Maverick 732 when you can.
