Decided to give some chicken breasts a chance on the smoker this weekend and came up with a variation on the classic Chicken Cordon Bleu.

I've been doing a play-by-play with my trusty camera phone and here are the results so far. I should be pulling these off soon and will post the final photos after dinner. :)

Pounded chicken breasts (exciting, no?)

Into a marinade of chicken stock, Marsala, thyme, onion powder, garlic powder and black pepper.

Three cheeses & then some... Swiss slices topped with cream cheese rolled in green onions then topped with sharp white cheddar. A little sea salt & black pepper, too.

After rolling the cheeses, they get rolled in the ham. And yes, el cheapo ham because I wanted a higher fat content.

Then the ham/cheese bundle gets rolled into a chicken breast. That's a whole basil leaf on the chicken, btw.

Then wrapped in bacon. LOTS of bacon, actually because I probably should have pounded the breasts thinner and was worried about making sure they were well sealed.

About an hour in and holding together nicely; very minimal loss of cheesy goodness.

Those look amazing. I smoked some marinated chicken breasts this afternoon for tonight's dinner. They were ok compared to what I am seeing here.

I'm happy to say that they held together very nicely, only very minor leakage on one or two. They stayed really moist and the flavor was excellent. It was really difficult for me not to go out and slather brown sugar all over that bacon while they were on but I managed to control myself. I wanted all savory, no sweet for a change and I'm glad I resisted the temptation.

I think if I'd do anything different it would be to cut some slab bacon into sheets and roll it out a little to get a better wrap. Either that or improve my wrapping technique.

Anyway, here they are... (and again, I apologize for the less than ideal photos)

Got so busy eating that I almost forgot to shoot again! When everyone cut into them, the melted cheeses oozed out just right. Gotta put these in the 'Got one right' column. :)

Wow! The only cordon bleu I've ever had, I got from Schwans. You know, the ones you throw in the microwave until the cheese leaks out? I'll certainly be trying these. Thanks for the Qview!
