Hello all,
Just getting started into the smoking world.
I live near the Gulf coast of Florida. I can't seem to find smoked fish for sale so I decided to make my own. A heck of a lot of fish here, but none smoked.
I love all kinds of smoked food and I believe this is a greay place to start.

I am expecting delivery of my new Bradley Digital 4- Rack Smoker tomorrow.
I ordered Jeffs book today so I think I should be off to a good start.

Welcome to the family Jim - good to have you here! If you ever get around to smoking marlin, make sure you remember to invite me. Marlin has to be my favorite smoked seafood. After I smoke it, I shred and brown it in a frying pan along with lots of onion and tomato. Dump some of it on a tostada and top it with some Tabasco sauce and.......whew! Good stuff and yes, I'm really hungry right now!

Again, welcome

Tom
