Hi, happy to be allowed in this post site. I have a lifetime of grilling but only around 4 years of really working on smoking. I have a highly modified Char Griller offset smoker and really like it. I am here 1st to tap into all the collective knowledge.. and 2nd simply because I just love talking to folks about what works.. and what doesn't.
