I've been smoking for a few years now. First with a gas Brinkmann, which I did not like. I actually got rid of it and didn't have a smoker for a couple years. I got back into it with a buddy of mine. We did a couple contests using 2 ugly drums and a weber kettle. They really performed well. This past summer, my wife got me a 22.5" WSM, which has performed like a dream. So easy to maintain temps and it keeps turning out really good food. The attached pic is of my first smoke on it in July. I did 2 racks of ribs and a BBQ fatty.
This past weekend, I did some beef jerky for the first time and it also came out excellent. Good smoky flavor and not too tough. All in all, I am looking forward to seeing what everyone else is doing, and trying new things with my own smoker.
In addition, I am a KCBS certified judge and table captain. I'm hoping to do a lot more of that over the next couple years and attain my master judge cert.
