North central Minnesota welcoming spring in the air

  1. Hello everyone,

    Just a quick hi from me and I am looking forward to this forum as I enter the world of smoking. I have a 30" Masterbuilt coming in tomorrow and will fire it up this weekend for smoked brisket. I have never smoked and I know no one who does or has so this will be a nice adventure for me. I am not new to cooking and owned a small town cafe for 7 years. I started getting into rubs a few ago and have created an interest in this with other family.

    Wish me luck and I am looking forward to all the knowledge you folks have with the art of smoking.

  2. Good luck Roger, I too have the MES 30. I have a lot of fun with it[​IMG].

    I too am from N/C MN but gave up on that cold and snow and have been in Arizona for 29 years!
  3. Hey Roger, welcome to the forum. When you get your new smoker you need to season it first. I would smoke some chicken and maybe some sausage first before jumping on the brisket. You want to make sure your smoker is working properly especially the temp gage. It will also let you get acquainted with how your smoker works, how much smoke, adjusting cook temps, etc. Brisket can be a tricky at times, you dont want to spend all that time smoking and not have it turn out Fantastic.

  4. Thanks for the suggestion Gary. I think I will take that suggestion and smoke up a pork loin roast I have. If I fail it will be no loss except for my pride. Roger
  5. Hey Azbo your a smart man for leaving this frikken cold. Still only 50 degrees today and only about 60 for Saturdays smokeout. It seems we all complain but never do anything about it. Thanks for the welcome, Roger
  6. So Roger, what town or near what town are you living?

    I spent most of my early life around Mille Lacs.
  7. I am about a half hour north of Mille Lacs in Aitkin. I had a cafe north of here in Palisade. That is where I came up with my member name of Palcafe. Mille Lacs lake has hit bottom with walleye fishing. DNR and others have really screwed that up. Not mentioning names.
  8. You don't have to mention names. I guided there for around 20 years, in the good times!
  9. Its sad to see the businesses and resorts struggle. It used to be a vibrant area. Businesses closed, homes for sale. I am sure the guides are not so happy now days. Hey, Thats a beauty there in your profile picture!
  10. Sad for sure, it is happening all over the country. That fish in my profile picture is a salmon from Oregon Columbia River.

    Fish walleye there in July and salmon in August and Sept.

    It has been a fun learning experience, dodging gill nets while fishing!
