Noob's 1st smoke - BACON! with Qview, sorta

As I posted in my intro on the Roll Call, I used a homemade version of the AMNS to do some bacon, just to see if it was worthwhile. To put it mildly, SUCCESS! My family just scarfed down the results of the first smoke, and begged for more. I forgot to take pics of the first run, so here's the end result:


I ordered an AMNPS the next morning, just got it going on the next piece of cured belly:



I cured this for 14 days, in Pops brine, which is what led me to this forum in the first place. Gotta go check on the latest batch, updated Qview later!

LOL.... listen sarg, we all thru necessity, fluient in typo which includes spelling. if you get 4 outta 6 letters right, you are in the zone.

Once you've made your own bacon once...... you're hooked for life.
Yeah, spell-check is my best friend!
 
I made the bacon because I had slaughtered a pig, but I'll be making more even if I never do another pig! Just have 18 pounds to go on this one...
 
Help! I'm not even halfway through my second  smoke, and I just caught myself digging through the fridge for something else to throw in with the bacon! I'd look for a 12-step group, but I'm not willing to admit anything yet.
 
My grill dosen't seem to be doing a good job of containing the smoke, so I went ahead and lit the other end of the AMNPS. Fingers crossed, I want this one to go well.

Some samples from last night's smoke. My first one was hickory chips from a local store. This one is A-Maze-N's Pitmaster pellets. My family prefers the Pitmaster. Despite the lack of color, this had tons of smoke flavor, almost too much. I plan to build a cardboard box smoker today, I'll smoke up the rest of the cured bellies this afternoon, along with a bit of polish sausage from the same pig.
 
A cardboard smoker can be one of the best tools in a smokers arsenal... Take pics of your "new" smokehouse....

I'm actually a toolmaker by trade, was a US Army supply sergeant for 12 years, thus the screenname. But the square corners and round stack are all due to the manufacturers, not my skill!
