I am a butcher by trade and I am looking into setting up a mobile BBQ/Food trailer with a small butcher shop built in. I plan on having aged hanging beef/pork on the trailer for fresh cut and to improve profit. It's a a bit of a project but hoping someone has some good ideas on set-up and builds.
 
Anyone familiar with mobile meat shop setups? Looking for some ideas. Would like to cut fresh hanging pork/beef from and also cook and sell that same meat.
 
Sounds like a cool idea. I saw a setup like that in Portland Oregon. Basic food truck setup except they had a glass counter case you could see in from the outside. Sausages, meat cuts, etc. they had a small walk in freezer locker at the back of the rig with bulk and larger cuts
 
Do you remember the name of that truck? I can't find anyone online in the US that is doing what I am looking to do. I would like to build out a 20-30' bumper pull trailer or RV. Can't find anything. I am sure I can figure out how to do it since I've been in the meat business for a long time but no use re-inventing the wheel and save my self from unforeseen mistakes.
