Hi Everyone!  My name is Jon and I'm addicted to smoking.  Actually, I'm very new to the art.  I was given a $59 electric smoker a couple of years ago and dabbled a bit.  I just decided to make an investment at bought a 16" offset smoker from BBQ's Galore.  It's similar to the SNP Brinkman you can get from Home Depot but the steel is thicker and a bit more heavy duty.  I wasn't totally impressed with the fabrication and my first burn in was just that, a burn in.  I couldn't control the temp and I was burning through fuel like crazy needless to say, I didn't quite know what I was doing.  I am a technology consultant by trade so I referenced The Google for help as I normally would.  I came across this site and it's completely changed my strategy and passion for smoking.  The wealth of knowledge available here is great.  As I type I'm in the middle of my second smoking adventure with my new rig.  This week I learned about the Minion method, convection plate and several other mods I may be trying down the road.  I put together a make shift basket for the firebox, and used a catering tray notched around the opening to the firebox as a temporary convection box until the one I ordered from Horizon comes in.  My 4 racks of ribs (rub recipe purchased from this site) have been sitting in the smoker for the past 2 hours steady at 230*.  I feel like a pro!  

Anyway, thanks for everyone's input on this site.  I'm looking forward to sharing what I learn and learning from the seasoned experts.

Welcome! Glad you joined us. How about updating this with some pics when they are done? Need something to drool over. No smoking for me today, wind gusts 60 plus MPH.
