I'm Jay, from Toronto. Been cooking over wood since I was a kid going to camp. Be it my personal little grill, a campfire, a big 6-burner lux-o-q, I am a King of the Grill... But new to smoking! Decided I wanted to have a go at real BBQ, an not just grilling. I have a Brinkman charcoal vertical smoker from Bass Pro, and my first go at it was a rousing success! Did ribs, nice a slow, over hardwood coals and hickory chips for 6 hours, and they fell off the bone just by looking at them hard! So now I'm hooked! Looking forward to learning how to prep, cook and enjoy good food on here!
 
BigJay55, welcome to SMF!  There's nothing like transferring all that grill knowledge to smoking meat, and having a first result you love eating.  Congrats on a first success!  Lots more to learn, all relatively easy.  Whomever said "patience is a virtue" must have been a smoker because it fits perfectly in the smoker's triangle: heat, meat, patience. 

If it can be smoked you'll find someone here who has done it.
