I have been lurking on the forums for ages, but just joined tonight.  I picked up  a slightly neglected BBQgrillware smoker that my brother was no longer using a few weeks ago.  I have been working to fix it up and bit, but have been faced with some challenges like weird fitting sizes. However, it is working pretty well at the moment.

I am new to smoking and this forum has been a huge help.  I have had good luck with salmon and had some mediocre ribs.  However, every smoke gets a little better thanks to all of you are your info on these forums.  I am in the midst of doing a mailbox mod using an old ammo can.  If it goes well I will post some photos.

Thanks again for all the great posts and I look forward to reading more!

Cali-Q, welcome to the SMF family.  Glad you joined and found a way to smoke some protein.  It definitely gets easier and better with experience.  Don't sweat the small stuff like a few degrees off on the smoker or working on a timetable because sometimes you just get a stubborn piece of meat.  Smoking Q is never an exact art but things do work like they should the majority of the time.  Heck, tonight I had a 2.7 lbs chuck roast I was smoking with a Cuban style recipe that should have been done in 6 hours or less, especially at the temps I was using once I wrapped it.  Took 8.5 hours!  That meat just didn't want to get done.

Glad the Forum has been a big help and we're looking forward to seeing you around the threads, especially your mailbox mod.

Welcome!
