Well I have been home sick the past 4 days so I haven't felt up to getting the smoker going. I wanted some BBQ so I went to my stash in the freezer and pulled out some PP and made a few sandwiches and then last night I didn't feel like cooking so I made up some of my favorite nachos "Porkachos". Chips, cheese, PP, lots of onion and anything else you like. I would have liked to add some black beans but didn't have any. Topped with a little sour cream and salsa and here is my supper. Sorry for the lame Qview post but I wanted to try out my new photo bucket app on my phone. Its kind of nice I can load them to photo bucket right from my phone and not have to load them to my computer first then to photo bucket.

Now if I only had some fresh guacamole to go along with the salsa and sour cream this really would have been awesome.

Sorry to hear you're under the weather (if you can get any lower than the weather we've been having).

At least you're eating good stuff!

Get Well Soon,

Bear

Hope you are feeling better soon. Great looking dish

Hope you get better soon. I'm sure you will since  "Porkachos" are like chicken soup to the SMF group.

what temp do you set the oven to to melt the cheese but not dry out the PP?

I just put it at 350 until the cheese is pretty much all melted and then I turn on the broiler until the cheese is brown then pull it out. In all its only in there 10-15 minutes depending on how much you are doing and how much cheese you put on it.

Looks Great, now all you need to do is get to feeling better...
