I have friends who own the Osteen Diner, (in Osteen, naturally) and they don't have barbecue on the menu.

What I was thinking is that I could talk them into hosting a Smoke-In for a local charity.

My initial thoughts are that they could supply the meat and the contestants could supply the smokers, the time and the fuel.

Patrons could then buy the ribs or whatever as a contribution to the cause.

If all goes well, maybe I could get them to hire me as their Pit Boss.

So, I feel like the Lone Ranger.

I need a little advise, a little feed back.

Is this a good idea?

Would any of my Florida Brothers come?

An additional note: The Osteen Diner serves maybe a couple hundred bikers before noon almost every Saturday.
I presume these Bikers are all in church on Sunday.

I'm one of them.

 
Well, a few things to consider, and those are local laws and sanitation requirements.

You would first have to contact several agencies to inquire if legally it would be feasible.  You would have to get sanitation input on controls, just like a comp.  You need to have fire dep't clearance for open fires, distance from buildings and hydrants, etc.  To engage in commerce with the public you have to probably get some kind of inspection of facilities and premises, disposal of waste, etc.  All food has to meet certain health and sanitation requirements on temps, etc. and you should acquire health and safety certifications or have someone on hand who is  The meat has to be handled correctly, cooked correctly, served correctly, paid for correctly, in clean conditions and cleanup performed correctly.

Yeah, I knew all that in the back of my mind but just wasn't willing to look at all the 'wait-a-sec's yet.

I don't know if I'm willing to get that deeply involved but they still need to serve something smoked.

(And I don't mean smoked grits.)

Hmmm, I've got a lot to think about.
