Had the day off yesterday and couldn't find anyone to play golf with so I ended up thawing some ribs I had in the freezer and fired up Joe. I hope the pics post right. This is my first try. It was also my first try using the 3-2-1 method which worked great! I did a slab of St Loius Spareribs and a slab of Baby Backs. Towards the end we threw on some potato pockets and another with roasted garlic. Left the Spareribs dry with GrillMates Pork Rub. Sprayed everything down with apple juice and Jim Beam. Used Faomus Dave's Rich and Sassy sauce on the BB's. Everything was really delicious!

The inside of your smoker looks familiar, i got a Horizon that looks similar, but that could be because the owners of OK. joe and Horizon are brothers, so i have been told.
 
The potatos are super easy. Sliced up some new red's, S,P,G to taste, then threw in some whole cloves of garlic and some butter. Seal it all up in a foil pouch and threw it on the smoker for the last hour and a half. They could have actually stayed on another half hour and been more tender but they were close enough. They don't get a smoked flavor that way but I bet if you wanted to you could do it my way and then just open the foil for a while at the end to get some smoke flavor in there. Good idea actually!
The Garlic pocket was a fistful of garlic cloves with a little S,P, and some butter. Those are my favorite and I can just eat them whole and by themselves. Great spread on crusty bread.
