No bark on my brisket????

    Hey guys. I smoked a small 2 pound brisket yesterday. Came out tasty, tender with a good smoke ring. Ran it around 225ish to IT of 160 then wrapped and back on to IT of 202. Pulled and rested about 45 minutes. I'm happy with it except it didn't really develop a bark. Any ideas?

    Wrapping will soften the bark. You can still wrap, then unwrap as you near your target, and leave it on the smoker to firm up the bark. Or go no wrap if bark is your goal. Just takes longer than wrapping.
  3. Try not wrapping it at all and planning for a little longer cook time.  Mine always come out moist, tender and BARKY!!!!
