Our butcher had these boneless butts on sale and they looked really nice, so here's what happened
Lit up a chimney and got a basket of lump and hickory stoking.
Down on the grate at 11:45 looking for about 200 INT
Not planning on foiling. So I'll just let it go. I will try not to peek!
I'll check back when it's up to temp, guessing 8 hrs or less. 1:00 now 227 degrees 80 INT
