What part of upstate NY? I'm originally from Adams Center, 10 mi. south of Watertown, 60 mi. north of Syracuse on 81. Now a Texan for the last 12 years in Fort Worth; great place to live and Q!

Thanks for the welcome!!! CNY is where I am, so I am indeed in the snow belt :) Waiting for warmer weather to give it a go (but not necessarily until all the snow melts!)- since i've got an un-modified ECB, and I have serious doubts that I'll be able to keep it up to temp.

I'm in Northern Cayuga County - that snowy "north of the Thruway" area. My sister and her family live up near Watertown Center area, so we get up 81 whenever we can to go visit. Thanks for the welcome!

It's a small world!!!! I grew up on the good old Northside of Corning, graduated from East High in '83. Did a 6 year hitch in the Navy and returned to NY where I eventually settled here near the south shore of Lake Ontario!!!!

The rest of the gang... Thanks again for the warm welcomes. I've already taken Jeff's 5 day course and found it EXTREMELY helpful. I actually think I might even be successful the first time I fire up my shiny new ECB!!!!

The beauty of this forum is all that great stuff that Grandpa and Dad have done over the years is not lost, it's in here somewhere.
What took our forefathers many moons to learn can be learned much quicker with the help of these forums and such.

Its funny, but my dad was a big fish smoker and I asked him if he used a cold smoke for the fish and he said "what the hell is a cold smoke".
But my story is similar growing up watching Pop smoke his fresh mackerel, just wish I would have paid closer attention.

Whats your neighbor gonna do now, since you got a smoker and the meat.
 
LOL!!!! I'll still share. He doesn't hunt or fish, so I always give him some of what I get, and since he's got one of those bigger smokers with the fire box on the side, he'll still be the go-to guy for neighborhood BBQ. Now, though, I can have smoked <meat name goes here> any time I want to. I'm itching to pull a big old salmon fillet from the freezer as soon as the weather gets a little warmer (got a nice 40lb king in October).
