    I just stumbled across this forum and had to sign up.

    Name: Lee Grider
    Equip: CharGriller Outlaw with offset firebox.
    Status: A tick above just learning.
    Location: Marietta, GA

    Last time I smoked a Boston Butt, I felt like it cooked way too quickly. It was done in about 6 hours and change. I gauged doneness with a meat therm and hit 180F in the center of the meat. No need to overcook if done. I would welcome any suggestions for slowing down, and approx how long a butt or more should cook for. I've heard in the 12 hour range. I would like to get it to that point. My temp gauges ran around 250 ish with 2 water pans. I use a mix of charcoal and hickory and oak wood. Flavor was great, just would like it more tender. It was a tad stringy.

    welcome to smf. run your smoker in the 225-240° range. leave the exhaust wide open. the intake damper is used to control heat, and it should be open part of the way at all times. it should take ~ 1.5 hours per pound to cook. here is a link with times and temps for everything. remember, it is a guideline. all meats will differ slightly. for example, when i smoke a brisket, it takes about 45 minutes to and hour per pound- and they come out excellent. i take boston butts and brisket to 200° internal. don't be afraid to ask any questions here. we will help you in any way you need. we were all beginners once. oh yeah, sign up for jeff's 5-day e-course. it is free and has loads of info in it. here is a link to it.

    Secondly...........check your temp gauge at grate level(stock therms never work)

    The first skill in smoking is learning to control you heat and smoke. Have you checked the calibration of your thermometers against a cup of boiling water? More ofter than not they are off and need to be adjusted.
