as i said up in roll call ive never smoked anything before though ive been wanting to get into it.....yesterday i picked up an older SnP(the heavier duty one) at a yard sale for $50......was going to wait till im out of town next week to get all the right stuff as the local hardware store is lacking.......also my butcher isnt open on Sundays......but the wife wanted me to try it out and wanted a good beef sandwich tonight......

so we went down to the Ace Hardware.....hmmm only briquettes guess they will have to work....no chimney, guess ill have to wing it, least they have briquettes without lighter fluid so i can add without worry throughout the day....no real wood chips but they had some BBQ Delight wood pellets.....hmm those might work, grabbed an apple, pecan and Jack Daniels...no remote thermometer, grabbed an analog that shows both oven temp and meat temp...

to the grocery store......no good looking ribs.....no brisket......hmmmmm?.....ok improvise.......lean oven roast heavily seasoned and wrapped in bacon.......

improvised sort of a baffle..added a water pan...used heavy duty foil folded over a few times to lower the chimney to grill level......having a hell of a time keeping it at proper temps(keep going low) but it smells and looks good after 3 hours......have only used the apple pellets on this one....


not going to be a perfect first run but it should taste good and gives me ideas where to go from here.....going to let it smoke another hour, pull it out, wrap it in foil and throw it back on.....going to be a long cook due to the temps staying in the high 190's but should work this time.....
 
190 will work, just takes longer. You show real determination. Gotta love it! Im sure youre gonna love it! Smoke on.
 
Exactly Rattler. Each smoke is a small adventure. And pretty tasty along the way.

not quite as tender as i was expecting, think most of this has to do with the crappy roast but could be cause my crappy temp control, the wife didnt season it enough however the gravy made from the juice in the foil is outstanding! actually would have to classify it as some of the best ive had..

next time im going to season the roast instead of letting my wife do it...
 
wow rattler............way to improvise..........nice smoke ring.....i will give you points for that..........but maybe next time.........cut against the grain........the meat will chew better............but WOW........nice first smoke with the handycaps............POINTS! ! ! !

i did for the sandwiches......it was far from tough, the roasts from the grocery store are notoriously tough and i have to say the smoke tenderized it a bit more than i can generally do in 7 hours in the oven.....which is why i generally buy my meat from a small family run butcher shop aways out of town but they are closed on Sundays......cant wait to see what i can do with a quality chunk of meat.....unfortunately it will likely be two weeks before i get to try again

Just wait your addiction has just begun. Wait til you are walking thru the store looking at things and thinking to yourself (I could smoke that,LOL)
