Hey guys, my name is Damon, and I'm a smokeaholic. My first experience smoking began when my uncle built us a smoker when I was a teenager out of two old propane tanks, some old t-posts, and about $500 in welding rod. I'm mostly self-taught, screwing up and getting sunburned occasionally along the way. I'm originally from NM, so everything has to have some element of green or red chile. I've also lived in TX, AZ, MS, GA, and currently call OK home, and I've tried to apply what I've learned from these places in my smoking. I've done the usual brisket, pork, chicken, and a turkey last Thanksgiving. I've done some rabbit, quail, and other wild game with some success, as well. My next goal is to do a cabrito (goat). I have been smoking with a New Braunfels Hondo Junior for a couple of years, and have recently upgraded to a Oklahoma Joe's Wild West Traditions SE Smoker. I've only been looking at the "mother" site and the forums a couple of days, and have already learned a lot. I'm planning on trying out my new smoker on a couple of yardbirds, a meatloaf, and some elk fatties this weekend. Hope everything turns out. Ya'll have a good 'un.
