Hi all, my name is Greg and I have just bought the Fox Hunter bullet smoker. It seems to need a few mods but did an alright job on 2 chicken breaststroke today in my home made dry rub. This smoker still struggles to maintain 250-275 despite drilling air holes in the fire pan. No need for water yet to regulate the temperature. If you have some hints and tips and further mods for me to consider then please feel free to fire away.

I've never head of that brand before.  On a charcoal smoker, if you have air leaks, I'd expect you'd be getting too much heat.  Welcome to the forums.

Good afternoon and welcome to the forum, from a cloudy and rainy day here in East Texas. Lots of great people with tons of information on just about  everything.
