Hi my name is Allan Im new to this forum I have been using a Masterbuilt 30" electric smoker and have loved how easy it is but just got myself an Oklahoma Joe Highland offset smoker. If anybody has any good advice on using offset smokers please let me know. I have already smoked a couple racks of ribs on it after seasoning the smoker and they have turned out great. They both had a great flavor and good looking smoke ring but were not as easy to pull off the bone as I would have liked, however the wife liked them. if you got any tips please let me know. Thanks in advance.

Welcome Allan, I'm sure you will enjoy this site. There is lots of knowledge and folks are always ready to share ideas, tips, recipes or anything else that you need. All you have to do is ask. There is lots of info and ideas for mods on your ok Joe. Folks are always doing something with them. You won't have any trouble finding ideas. Good luck, Joe
 
Hey Allan.  Welcome to the site.  I would say that as long as your first smokes on the new smoker were edible and your wife liked the chow, your off to a good start.  Got to figure that it will get better as you go along.
 
I already know that I will be getting rid of the temperature gauge on it and ordering a plug to put in its place and mod me a new one or two down at grate level for more accurate temps. I noticed that after doing the boiling water check that the factory gauge is about 25 degrees off. I also want to get me a expanded metal firebox insert for it and a baffle plate for the smoking chamber side for more even heating. Thanks for your replies.
