I'm new to the forum. I purchased a MES 40 and AMNPS 5X8, after reading some of the threads I made the mailbox mod and what a difference. I haven't done any smoking since the mod but I tried it out with the MES empty and no chip tray. The smoke was exactly what I was hoping for. I'm anxious to try it for real. One thing I did discover is the meat probe on the MES is off by about 20 degrees. I discovered this while smoking a brisket. I haven't checked the actual temp of the MES, I hope it's pretty accurate.
 
Hello and welcome to the forum, I don't know why, but the temp gauge that comes on most smokers are not accurate, looks like they could put better temp gauges on them even if they had to charge a few buck more.

The MES is a GREAT smoker.  I have one myself.  But the week spot on the units are the thermostat for the meat and the smoker temp.  They are usually off by the 20 degrees you mentioned.  I see you bought your first few mods.  One you must have in my opinion is the Maverick Digital Remote thermometer.  You'll see that almost all of us MES owners have them.  A Mav will give you spot on readings and bring you cooking to the next level.  Expect to pay around $60 - $70 bucks.
