Hey,

I am Erik. I am from the small town near Buffalo, NY. A lil about myself: I am about to turn 23 in 2 weeks, am a volunteer fireman/emt, I work with people with special needs and may get another part time job working in a warehouse. I went to college for 2 years for physical therapy, dropped out because i got bored with it and not sure what I want to do but am hoping to go back soon (still not sure for what). A couple of my hobbies are snowboarding, hockey, hiking, and soon I'll be adding smoking to that list (I will also eventually also be roasting my own coffee and making my own sausage from scratch; I am a picky eater but I love my coffee and my meats). Some of my favorite music is an odd mix, but mainly includes punk, metalcore, and classic rock (Favorite bands include NoFX, Rancid, Led Zeppelin, Killswitch Engage, the Doors, August Burns Red, Pearl Jam, and the Beatles).

I am a newbie to smoking so I'm looking to soak in all the knowlege I can get, which won't seem to be a problem here. Just waiting on my delivery for my Brinkmann ECB smoker, nothing fancy, eventually I'll upgrade to a better smoker once I get some experience in; so any kind of advice or knowlege you have to share, I'm ready to soak it in.
 
Hello Erik and Welcome to our addiction.  A word of warning: There is no 12 step program for this one!  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!

Hello Erik and good morning. Nothing wrong with an ECB, I started with one myself. Be patient, allow plenty of time and get to know your smoker. These take a bit more attention, but will turn out some great BBQ. I would start out with chicken (Cheap and pretty easy) maybe throw on some sausage too. Getting to know how your smoker cooks will make life a lot easier on the long cooks. Keep it simple, don't over think it and have fun.

This is a great place to learn to smoke. When you want to try a project, just enter it in the search bar at the top and you will find several methods for doing it. Also, if you post pictures as you go along with a project, you can get comments while you are smoking.
