  1. Hello! I have had a gas grill for years, and decided it was time for a smoker. I bought a weber 18.5" smokey mountain cooker!

    So the first go round didn't go so well - did you know it takes more than 6 hours of smoking for a pork roast to be falling off the bone? Well I do now!

    So a dumb question that should probably posted in one of the forums... When adding wood chunks, are they supposed to be soaked first? I ordered the book to help figure this out, but am too impatient to wait! I want to do more smoke'in!

    Welcome to the forums! Glad you've joined us. You've found a great place to learn and share ideas on our favorite pastimes...grilling, smoking, and curing great food! There are lots of friendly and knowledgeable folks here who really enjoy helping one another. Just ask any time you need help and you'll get plenty!

    I never soak chips...a waste of time because the water has to evaporate before the wood will smoke.
