I'm very new to smoking.  I haven't even smoked one ounce of anything yet.  However, I've just purchased a custom made smoker and I just seasoned it on yesterday.  I need all the help that I can get.  In looking for a forum to learn from, this one just stood out due to the members calling Smoking MeatForums home even though they are registered on other forums.  I look forward to getting started. Attached you will find pictures of my smoker.

Welcome to SMF if your avatar is your smoker it looks good.Start by checking the Temp. Gauges that it came with.Get some chicken parts brine over night and see what it does.

Welcome from next door. This is a great site with lots of folks who are always ready to share their ideas and tips. All you have to do is ask and keep on reading.

As far as your cooker is concerned, its way too much to properly learn on. You will get very frustrated and probably quit. As you see, I'm only 100 miles away. I will be happy to come to Charlotte this weekend and pick it up and store it at my place for 4-5 years until you get comfortable smoking. Then you can come and get it. I will have it seasoned and properly broken in for you at no charge. See what a nice guy I am?

Good luck and good smokin', Joe

Good evening and welcome to the forum, from a pretty nice day here in East Texas, and the best site on the web. Lots of great people with tons of information on just about  everything.
