Would love to make some snack sticks.  Here come the questions.  What is the best meat selection to use.  I want to make something fairly simple the first time around.  Any recommendations for recipes?  I'm thinking maybe a premix will be better to start with? Which kind of mix and where to get(I live 20 min from cabelas)?  Also any other info would be great such as casing size and type as well as cooking procedure.  Simple stupid please!

Its not whats the best meat its what you prefer. Beef sticks, pork sticks or a mix of both

20 to 22 mm casings... Fresh or collogen.... Smoke to an internal temp of 140.

The Cabelas Smokehouse stick kits come with the correct casings.
