Hello All, I am from Illinois. New to smoking. I am using a little cheapie Kingsford charcoal and water smoker from Wal-Mart for $35 to get me started. I love to cook and love smoked meat so this seems a logical progression in cooking. I don't have all the fancy tools just a gauge for inside the cooker and a meat thermometer. So far I have done ribs, and a pork loin which turned out great. Today's adventure is 2 chickens.

Thanks guys. I must be doing something right with my bargain basement equipment these chickens turned out awesome everyone devoured the chicken and potatoes cooked in the water pan and fought over the carcasses trying to pick more meat lol. Wish I would have taken a pic.
