Hi everyone. So the nickname is Iceeeeee. Living in New Jersey. Came home Friday night to a Mastebuilt Bluetooth Smoker. I love BBQ. Just put it together and performing the 3hr pre-season break in. Going to try a few slabs of ribs and a brisket. Any pointers greatly appreciated. Going to use hickory or mequite wood chips.

Welcome from Michigan. That MES will treat you real good. Like gearjammer said. Low and Slow is the way to go. You'll love what she can do for you.
Don't worry about the point where it will stall on the meat temp raising. If you need to you can wrap it in foil. It helps powering through that time. Meat will still come out good. The bark will still be there for you.
