Newbie smoker-Snack stick help

    hey ya'll! I am new to the forum and new to smoking. I was raised a city boy and never had anyone to teach me so I have to learn the hard way! OK, what I am really interested in, is taking the "junk" nobody likes and with the power of smoking make it great. I have two things I want to smoke; hog and eventually carp. Call me crazy, I know. I have already made some pulled pork a couple of times. Once good, the next time meh. Ok sorry for the long rant/intro, this is what I am looking for help with- wild hog snack sticks. I see most people use meat/venison and found just a little info on hog. Anyone try this? I know most people that do use pork also use some pork fat. But what about just using the deliciousness called bacon? Any help would be awesome! Thank you!
     
  2. Welcome to the group. Would you drop by roll call so everyone can give you a proper SMF welcome.

    Now to the wild hog. I treat it the same a farm raised. When I make sausage I add fat or 73% ground beef if I have it. If not it is extra lean. i have never made snack sticks with it. I have made 1 1/2" salami. You could use the same ingredients for snack sticks.

    Here is a link to my last snack sticks made with 80/20 beef. it should work fine for your wild hog. Add fat if you have some.

    I made venison snack sticks and ran a pork shoulder through the grinder to mix with it.

    I have also made breakfast sausage with feral pig-again, I mixed some store bought pork shoulder with it for a little more fat.

    Bottom line, just like the guy above me said-a little fat helps the texture, but it's ultimately up to you and your taste. Let us know what you do and how it turns out.
