 and do yourself a favor and read the 5-day smoking course. Read up on doing Brisket and be very Patient,those Chunks of meat are notorius for stalling and causing some to crank on the heat, just be vigilent and your Brisky will turn out well.

Enjoy the event with a few refreshments, but don't party too much and forget you job

Welcome aboard Ranger! If you're open to a word of advice, log in here this weekend when you start prepping your brisket for smoke. Start your thread so people will be looking and know it's your first brisket smoke. This way as questions come up you will have people here to answer based on their own experience. If you research some of the threads here you will see many where members post their problems or questions regarding their smoke and other members walk them through it.

Just my humble opinion.

sorry for late report. brisket flat came out dry, but point made up for it as it was so tasty it melted in our mouth.

gonna try again in a few weeks. as of now, i'm kinda all brisket out...lol!!!
