Just got my smoker yesterday, a Masterbuilt 30 from BassPro. My first effort is smoking while I type, about 10 lbs of nice fresh bluefish fillets. My question is this, should I have removed the skin before smoking?
 
Welcome to the board! Use the Search to look up your smoker and see how people use them. And, go look in the Fish section to see how people handle various kinds of fish in smoking.

I don't know about bluefish, but I've smoked salmon with and without skin. I usually prefer to smoke with the skin on, for two reasons: First, it's usually $1/pound cheaper with the skin on, and second, if the skin sticks to the foil, it's no big deal because the meat comes off of it.
