I've the all the different ways people like to make them and they look
SO GOOD!
Im not sure what breakfast sausage chub is. Can you use regular breakfast sausage? I've never made sausage myself.

I really want to try some these.

Fatty -
A 1 lb. roll of Jimmy Dean, Bob Evans, or other good grade breakfast sausage not having excessive fat content is a "chub". It comes in larger size rolls also, still a "chub". Balogna and other prepared lunch meats also come in chubs.
Remove the plastic wrapper and place the roll of sausage in the smoker. I smoke mine to 170°, well done for pork, using a probe type digital thermometer. Takes 2-3 hours at 225°-250°. Use any flavor sausage you prefer, I like JD sage and hot, as well as regular.
Some folks prefer to stuff the roll with whatever they can come up with. Up to you. It's your fatty, do what YOU like!
A fatty fresh off the smoker eats mighty fine! They reheat well, can be frozen and used later, vac. sealed is best.
Some uses - We make great fatty breakfast burritos, fatty pizzas, the list is pretty much endless.
Now, go get some sausage and get to smokin' it! You WILL like it!

FATTY'S are like ABT's once you make them once they become part of every smoke. You can always find room for FATTY'S & ABT'S.I stuff mine with what ever I can find in the vegitable(?) draw in the frige, chuck in some cheese and into the smoker. Mushrooms, olives, scallions, pepper's
what ever. Just try anything you want. They give you something to munch on while you're waiting for that 12 hour butt to finish. "Try it you'll like it"

I'm new to this and the fatty and ABT's are a must for every smoke.
Don't be afraid to ask any question. The help and knowlege of this forum is the best.

If I stuff a green chile with cheese and wrap the fatty arround it will the chile get cooked and soft like an ABT?

I am soooooo smokin' a fatty this weekend. I thought it was like a meatloaf from the pictures. 3 day weekend for moi! I'm thinkin'...fatty...butt....meatloaf.....and then I guess I should have some salad.
