Newbie. ? on assembley of brinkman smoker

Hello im Mike from eastern wisconsin. I got a older brinkman uprite smoker from my dad that had been in his garage for 20 years. never used. anyway ,,, ok well this is prob a dumb ? but here goes. i have 2 pans one has a hole rite in the middle of it one does not. i take it the one with the hole is the charcoal pan? or is that for wood chips?? the one with no hole is waterpan? and two racks.. Now if i put the charcoal pan inside smoker and waterpan above it,,, then i only have spot for one rack??? does the charcoal pan just sit on ground? or does it go inside smoker like i had it???. i had some fresh trout and smoked em whole for bout 3.5 hours very good to my amazement.... really. so i have 5 more i have burried in brine im gonna do tomo. so just hope someone can tell me how it goes together. I really do appreciate any info you would share. thank you very much.

Mike welcome to SMF glad you decided to join us. Maybe you can take a couple pics of the smoker and post them for us. The pan with the hole in it should be the charcoal pan and the one without should be the water pan. I would think both racks should fit in at the same time tho but without seeing it who knows.
 
Hi Mike - welcome to SMF. My first smoker was just like yours and I think I can help ya get it ready to go.

It sounds like you have the general assembly correct. The pan with the hole in the middle is the one for the charcoal. It fits inside the bottom "pan". The 2nd pan does not have a hole in it, and is your water pan. The hinges that hold the water pan in place also allow you to rest one of your two grates on top. That will give you one grate that is literally directly over the water pan, and the other top grate. Feel free to place food on both grates. Just make sure that if you cook poultry and other meats together, the poultry goes on the bottom rack.

Sumosmoke has it right... you can cook pork butts, whole turkeys... really just about anything is these smokers! also, don't be afraid to experiment with what you put in the water pan...apple juice, OJ, cola... have fun with it! I would love to see some Qview!!

First off welcome Mike to SMF. It sounds like you are well on your way to be an outstanding new member of this fine site. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

Hey got my smoker all ready to go this morn.only to find i have a tiny hole in water pan! ill just get a new smoker anyway im gonna still do my trout today think illl just put a beer can in water pan and fill a few times.. Really just wanted to say thank you all for the info and fr welcoming me to smf the way you all did.very nice helpfull people. hard to find these days!!!!! i look forwars to the learning i can do here with all your help!! Because god knows i love food!!!! Thanks again all

Mike you can take a piece of tinfoil and place it in the water pan make it cover the whole inside including the bottom of the pan. This will do a couple things it will keep it from leaking but it also makes clean up very easy. My water pan doesn't have a hole and I use the foil just for the clean up aspect

I started with a ECB and quickly upgraded to a UDS. I used all the parts from the ECB on my UDS. Now I'm a smoking fool!
