Newbie Needs some Help

I live in SW Florida (33 yrs) and just started smoking. Masterbilt Vertical 2 door Gas Smoker. I am making some venison sticks today and need to smoke under 200 degrees. My first couple smokes I couldn't maintain less that 210 degrees of course is is Hot & Sunny down and it says 110 degrees in the smoker just sitting in the sun without the tank even hooked up. Any tips on getting the temp under 200 degrees?

We also want to warm up some BB Ribs I smoked over the weekend. Any tips on the best warm up method for couple day old refrigerated ribs?

are so many different ways to make great Q We all have our own taste.

You can fill some bottles with water and freeze. Then put in smoker.

You can microwave or use the oven to warm wrapped in foil.

I don't know about ribs, but I've had good success re-warming cold pulled pork by submerging a plastic bag full of it in boiling water.  I don't know why that wouldn't work for ribs.  Just be careful to put something on the bottom of your pot to prevent the plastic from coming into contact with the bottom and melting.  I'm sure a trivet or something like that would do the trick, as long as it won't interact with the metal of your pan and stain it.

to SMF!  We are so glad you joined us! Ditto on the frozen bottles of water. Heard that a lot of the guys do that.I warm my stuff in the oven....covered in foil....at a temp of 300* for about 30-45 minutes.  Usually works for me.

Another thing you can do as long as you used cure in the sausage is cold smoke them then put them into the oven to actually cook them. In the search bar type in Needle Valve Mod and see if you think that might help but Summertime in FL with a propane smoker it's very hard to keep temps down.

I have a GOSM propane smoker and when I got it I couldn't keep it below 250* so I installed a "needle valve" and I was able to get it down to about 185*. I wanted to go lower to smoke jerky so I replaced the burner with a smaller one, I actually took the side burner off my gas grill, it was about 1" smaller in diameter. Now I can get the temps down to about 135* even in this Georgia heat!
