Hi everyone need a little help on getting started with a Smoker/Grill. Not sure what to get I have been a working chef for 25yrs. but never got into Smoking or BBQ . I have moved to South Carolina and every one has there special recipies and how 2's I would like to surprise the kids and there friends when they come to Lake and show them I also can Smoke meat and put some tasty BBQ on the table. I've spoke to some people and they said to start with a Grill with a Firebox attached. Can ya'll help me out?

Welcome this place is like home there are a lot of options as far as a smoker. What kinda fuel would you like to use any preference on size and what kinda budget are you looking to spend?  You don't have to be rich to make good BBQ you just need to follow basic strategies and you will be the talk of the table in no time.  You already have the skill set you just need the knowledge.

Welcome to SMF K'cheff. If your looking for a 'grill' type smoker with a fire box, take a look at any of the Char-Griller units with a SFB (side fire box)  They are of okay quality (thin metal construction) but with some modification they'll put out some quality 'que.

Char-griller has different grill sizes so you can choose how big or small you want to go. The same size fire box (sold separately) will fit all the units.

Second I suggest you spend some time looking in the sections for each type of smoker (Charcoal, gas, electric, wood burner), then once you decide on a fuel type that fits your needs we can help you pick a good smoker for your budget.

Third - If you want to go with charcoal I would highly, highly recomend a Weber Smokey Mountain (WSM). I started out with an offset firebox smoker like you talked about and ended up getting rid of it in less than a year. Bought the WSM and have never looked back! Another option if you are handy with tools and want to save $$, you can build an Ugly Drum Smoker (UDS) - they work really well and can usually be built for under $100....... Me, I'm not so handy and just wanted something that worked well out of the box so I went with the WSM.

But do some reading first then pick a fuel type, then a smoker. Best of luck and don't be afraid to ask questions, you got about 10,000,000,000,000 years of accumulated knowladge between everybody on this forum... lol.

Kingcheff, glad to have you here with us, this place has all the tips, tricks and gadgets you will need to turn out some great que!  First I would take the FREE E-Course, buy Jeff's rub and sauce recipes, (it gives you a good place to start), be sure to sign up for Jeff's Newsletter, look over the WIKI section and find the Acronyms, I am sure they are different from those in a restaurant and finally the only dumb question you can ask here...is the one you don't post! Welcome to SMF looks like you have a lot of good advice already. My choices would be a Weber Smokey Mountain charcoal, or a Masterbuilt electric. I own both & they are both well built, reliable, easy to use, and perform well right out of the box. Of course if you have an unlimited budget, one of those $15,000 custom trailer rigs would be cool.
