New smoker in Washington.
Used to smoke alot when I was a kid with my dad.
Got started again here in my back yard and am excited to try a few new recipes other than fish and ribs. Game hens are next on my agenda.
Any ideas or recipes?

Welcome to the SMF and game hens should be smoked like chicken, hi temp and good crisp skin.

Just did 4 pheasants... the "secret" I use is I brine 'em with spices then brush 'em with bacon grease before I smoke 'em. Keeps 'em nice and moist.
