Newbie in southern ON Canada

Hey folks.
Newb smoker, lots of exp with jerky and a dehydrator. Just never smoked anything. Just bought a "Masterbuilt" 30" electric smoker today. Gonna take a run at summer sausage and trail bologna. Looking forward to interacting.
