All I got is a Masterbuilt Smoker.  Nothin' fancy, but gets the job done for now.  I'm wanting to make a rotisserie style smoker, so I'm anxious to look at everyone elses builds.  I also have a smoking pistol, that I use for cold smoking.  One thing I did get a few years ago, that I love playing with during the summer is a la caja china.  I use the smoking pistol for that too, and I roasted my first whole pig last summer.... That was cool, and everyone loved it!!

I got a question... Every year I put on a Labor Day weekend party, and they always have a different theme for what kind of food I make.  This year it's going to be a Mardi Gras party, so has anyone smoked or roasted Alligator legs?  Thought that might be kinda cool.

  3. Get a good Probe Thermometer as We Smoke By Temperature NOT TIME.

  4. A good choice for a remote dual probe thermometer is the Maverick ET-732

  5. If you are wanting to get into curing meat, there are many members here more than happy to help and give good advice.

  6. If you are unsure of a procedure ASK, don't ASSUME, It will make your Smoking experience more pleasant...
