Hello all... just stumbled across this forum and have been reading through some of the threads....Great suff!! I also signed up for the 5 day into course to smoking....Well here is my grill that I just started trying to smoke ribs with. It is a dual chamber charcoal grill I purchased from Sams Club...love the barbque part but I am undecided on the use as a smoker...I am truly a newbie to smoking but my concern is that smoke leaves from the hood and charcoal chambers as it is not sealed. I have placed wood and charcoal in one chamber and smoked ribs last weekend and they came out pretty good.

Question- Should I be looking into a "smoker" to obtain optimum cooking? Are pits/smokers sealed at the hood?

Well look forward to hearing from everyone and I am excited to be part of the forum.

Hey Joe,

I don't see any exhaust on that unit? If not the smoke would naturally have to exit out the hood. Most inexpensive units are not sealed that well anyway. By the way what part of Arizona are you from?
 
Yes your right no exhaust- I am trying indirect heat cooking with wood chips and chunks. Also, I live in Surprise AZ. Are you in the area?
 
There needs to be a place for the smoke to exit wheather from the hood or chambers. If not you'll get a creote stall smoke taste. You only want the smoke to kiss the meat & exit.

Hello Joe, and welcome to the SMF. I see you already are getting some good answers. BTW, I moved your thread to roll call, so that more members can give you a warm welcome. It's all good my friend.
 
First off welcome joe to SMF. You'll like this place cause there are alot good folks here that would just love to help you with just about anything to do with smoking. Since you have already looked at the E-course you should just jump right into smoking something. So run don't walk and grab something to smoke aand if you have any questions just post them here and we will anwser it for you in a jiffy. Then you HAVETO learn baout the Qview (pictures) as we call them. That way we can see what your smoking and what your smoking on too. So go grab something to smoke. Welcome To The Addiction

When you uploading to Photobucket I always use the Large IMG setting, 640 x 480 it is a nice size...
