Hello fellow smokers,

I am new to the world of smoking meats. I was raised on smoked goods and have always enjoyed eating them. It's my soul food. A friend of mine (K5YAC) gave me an ECB yesterday and introduced me to this site. I have been wanting to get into smoking for quite some time now but I just never did it. When the oppurtunity came around to grab the ECB I jumped on it. I am very excited to smoke my first batch of meats. I really can't wait to do my first ABT's & Fatties. I am going to try and do a pork shoulder this weekend if I can get to the grocery store. Any tips or hints would be greatly appreciated. Thanks!

See, I told ya there would be several folks come along to say howdy. You can usually expect the same kind of response when you have specific questions about you food prep, cuts, technique, finishing, serving, etc. Anything really.

I wasn't kidding when I told you that I learned how to BBQ here.

Probably a little cheesy, but I'm giving points for getting off the luker bench and signing up. LOL!

Oh, remember my e-mail yesterday where I referred to this hobby as an "addiction?" Mballi (and probably everyone else) agrees.

Pork shoulder is a good choice to start with... it is pretty hard to screw that up... very forgiving. I would recommend a digital temp probe for you meat. I got mine pretty cheap at Lowes. They now have something called a Weekend Warrior, or something like that. Do a search for digital probes and you'll find a slew of recommendations. Many people like the Maveric or ET-73 or ?? You'll see em. I will say this... there is no better way to know when your meat is safe to eat, or at the proper temps to pull.

I'll be sending you a link to the ECB mods page I was telling you about.

Enjoy!

I found Jeff's page on how to modify the ECB. He gives some really good tips for mods. Where did you get the cable wire (the parts you put inside your meat) on your digital temp probes?

They come as a set. You should be able to find a complete head unit and temp probe for under $20.

Here is the one I use... I think I paid $15-$20.
