Hello!

I love cooking and grilling but just got into the whole smoke scene... I love smoked fish so I started to look at various smokers, etc...

I was at the store the other day and saw the ECB, not knowing it is a little monster after some mods, and picked one up, cheap.

Yesterday, I read the manual and did the whole "seasoning" of the smoker thing...

I have been trolling these forums to learn all the tips and will definitely heed all the advice I can. I think the first thing I will try is a 3-4 lb chicken and some ribs. Eventually I want to smoke all sorts of fish, primarily salmon and mackerel.

Anyway, I'm glad I stumbled upon these forums!

Welcome to the forum. I'm sure you'll enjoy it here. Caught my 1st Salmon of the year on Sat. Gave it to the brother-in-law's girlfriend, but it's getting to be time to get some and smoke some. Welcome, we're looking forward to your q-view.
 
First off welcome Rev to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

So here is my first attempt ever and I must say, I'll only grill when I don't have time! I used Hickory chips in the stock ECB.



I just got finished doing some mods and can't wait for this Sunday. I plan on doing the 3-2-1 ribs with Apple Chips!!!! So excited!
